Laura’s Granola Recipe

My wife, Laura Miwa, is a granola lover. After tasting many varieties from all over she finally arrived with her favorite compilation of ingredients! She told our pastry chef at the time, Darcy Matteucci, and with her magic touch, it quickly became a hit. We now package it for take-out and as soon as it hits the shelves, it flies out the door! Feel free to swap out any nuts or fruits for your favorites.

Makes approximately 2 lbs.

Ingredients:
3 3/4 cups old fashioned rolled oats
3/4 cup sunflower seeds
3/4 cup pumpkin seeds
3/4 cup coconut chips or shredded
3/4 cup slivered almonds
1/4 cup sesame seeds

1/3 cup vegetable oil
1/3 cup honey
1 teaspoon vanilla extract
1/2 teaspoon salt
3/ 4 cup roasted, unsalted cashews
1/3 cup dried cherries
1/3 cup golden raisins

Preheat your oven to 275°. In a large bowl, combine oats, sunflower and pumpkin seeds, coconut, almonds and sesame seeds. Mix well. Add the oil, honey, vanilla and salt into the oat mixture and stir until well combined.

Spread the mixture out on a rimmed sheet or cookie pan and bake in the oven for 20 minutes. Remove pan and, using a heat-proof spatula or spoon, stir around the granola so that all sides get baked evenly. The edges tend to brown sooner than the middle, but don’t worry. That’s why we mix it up during baking. Place back in the oven for another 30-40 minutes, or until toasty and crispy. If there are areas that are browning more than others, just keep mixing up the mixture until it browns evenly.

Allow to cool. Add the cashews, cherries and raisins. Can be stored in an airtight container for up to five days.
