Componere Fine Catering is all about pushing the envelope and providing “world class dining, anywhere.” Co-Founder Ethan Mantle, formerly of Michelin three-starred Georges Blanc in France, works with a group of equally formidable fine-dining chefs who have cooked at such illustrious establishments as The French Laundry, Benu, and Chez Panisse in Berkeley. Componere, which is Latin for “to bring all the parts together,” offers an elevated alternative to the norm, focusing on precisely tailored menus and events that highlight the specialty vegetables grown locally on Componere’s own organic farm in Novato by Farmer/Co-Founder Tisa Mantle.
The Componere + Lord Stanley Dinner benefiting the Bay Area Rescue Mission was a treat for all senses. Lord Stanley’s light, minimalist space allowed the carefully-crafted plates of meticulously placed ingredients to shine, down to the last geranium petal. Husband and wife duo Rupert and Carrie Blease of Lord Stanley wowed guests with smoked Castelvetrano olives (a highlight of the dinner) while Componere proved that it is not your run-of-the-mill catering company. In a sense, Componere felt like the opposite of catering. An abalone escabeche amuse with white bean and chorizo that was both delicate and bold, served in its shell on a bed of peppercorn and rock salt had little resemblance to the over-battered crab cakes so often served at catered events. The Kampachi atop charred avocado with green tomato looked like something you would find on your plate at Benu. The grand finale, so often an afterthought by chefs, was certainly not the case here. The palate cleanser, a boozy rosé jello shooter set the tone for an aromatic creme fraiche bavarois nestled in a lemon verbena granite that was creamy and cool. If you are looking for a fine dining catering company with Michelin star quality cuisine Componere should not be overlooked.
