Barbara's Skillet Corn Bread

Barbara's Skillet Corn Bread
Ingredients
- 1 1/2 cups all-purpose flour
- 2/3 cup granulated sugar
- 1/2 cup yellow cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cup milk
- 2 large eggs
- 1/3 cup vegetable oil
- 3 tablespoons melted butter
Directions
- Preheat oven to 350°.
- Combine all dry ingredients in a large bowl.
- Combine wet ingredients in a small bowl. Add mixtures together until blended.
- Pour olive oil into a black cast-iron skillet, covering the entire bottom. Carefully heat in the oven at 450° until a water drop sizzles.
- Pour mixture into the hot skillet and bake for 20 to 25 minutes. Test with a wooden pick.
