The Clift Hotel’s iconic Redwood Room has a new spring menu with an eye towards sustainability. Their recently installed rooftop bee sanctuary and herb garden serve as inspiration for Executive Chef Thomas Weibull’s decompression menu (Clift’s take on happy hour, and yes the drinks are discounted). Cocktails such as the Peerless Purple (lavender infused gin, honey syrup, lemon juice and lavender bitters) and the Compressed Watermelon Salad (lavender infused honey, pumpernickel crisp, chevre, watercress, lemon confit) highlight the hotels home grown herbs and honey. The decompression menu is served Monday-Thursday 5:00 p.m to 7:00 p.m. The Redwood Room is available for private buy-outs and can accommodate up to 200 guests.
